Rice-Stuffed Tomatoes

NL_ricetomatoesThis is a recipe that I updated – a little – from a Pinterest find (here’s the original post: http://smittenkitchen.com/blog/2013/08/rice-stuffed-tomatoes/). Another great way to use up leftovers; specifically: rice. Ever get stuck with a ton of white rice days after you’ve ordered takeout? Well my boyfriend/roomie doesn’t like white rice, so whenever we order takeout I get stuck with twice as much. This was a simple & delicious way to use some of that up.

This recipe makes 6 stuffed tomatoes, serving three people as a side dish. One serving provides more than half of the vitamin C you need in a day & over 40% of your vitamin A!

Ingredients: IMG_0852

  • 1 cup of cooked white rice
  • 1 Tbsp. olive oil
  • 6 medium tomatoes (I used romas & they worked GREAT)
  • 1/2 onion, finely chopped
  • 1 clove garlic, minced
  • 1 Tbsp. dried oregano
  • Salt & pepper to taste

Directions:

  1. Heat oven to 350 & coat an ovenproof baking dish with olive oil
  2. Cut off the tops of the tomatoes & use a spoon to carefully scoop out the seeds & flesh inside
  3. Salt the hollow tomatoes & turn them upside down on a plate to drain
  4. Heat a skillet over medium heat & add olive oilIMG_0851
  5. Once hot, add onion & garlic, cooking 2 minutes
  6. Add cooked rice to pan & cook 3 mins until rice begins to “toast” a little
  7. Use fork to mash up tomato flesh, seeds & tops, then add to pan – it’s okay if it’s a little chunky
  8. Add 1/4 cup of water, salt & pepper to taste & simmer until rice soaks up water
  9. Stir oregano into rice mixture & arrange tomatoes right side up in baking dish
  10. Spoon mixture into tomatoes & spoon any extra mixture around tomatoes in dish
  11. Bake, uncovered 20 mins or until tomato walls are soft

  1. Thanks for the suggestion. Well, I find the garlic cloves flavor very strong. Garlic salt /powder quenches your craving for garlic and is not strong either.

  2. Thank you! I hope you are enjoying the Easter holiday (assuming you celebrate). For easter we are having a potluck-type thing at my sister’s home! I’ll be bringing green beans (not sure how I’ll prepare them yet), vegan deviled “eggs,” & vegan cadbury cream eggs! I’m working on posting the recipes right now 🙂
